    Pompano

    My Florida buddy air shipped me some Pompano.

    Anyone have experience and recipes for this fish? I can look online but some of the best recipes come from friends and family.

      Nice mild fish with firm flesh and above average oil content. I seared it in a cast iron pan and made a lemon dill cream sauce to top it with. I will definitely eat more of this fish in the future.

            I have caught hundreds of pompano, not a bad tasting fish, some say its one of the best..well shit they never had fresh black grouper before....but here is the deal with pompano..blackened and seared in a frying pan you can't go wrong....Now when you get some grouper I will share with you the best recipes you will ever receive...BLACKENED IS THE BEST!!!!
