Low Carb Chicken and Egg Pizza

 Who says you can’t have pizza on a low carb diet?!?! This healthy low carb pizza recipe is quick, easy, convenient and replaces the traditional carb filled crust with egg whites and sugary tomato sauce with cream cheese and salsa! This pizza is addicting and never gets old because you can always mess around with the toppings to suit your craving!

Ingredients:

 1/2 Cup Egg Whites
 1 Tbsp Whipped Cream Cheese
 2 Tbsp Salsa
 1 Serving (About 3 slices) Chicken Breast Cold Cuts (I use Boar’s Head Low Sodium Chicken Breast)
 2 Tbsp Parmesean Cheese
 Your favorite veggies or additional toppings of choice (I used broccoli)

Directions:

1. Take eggwhites and pour them into a tupperwear dish

2. Mircrowave egg whites for about 2-3 minutes or until eggs are cooked (this is your crust)

3. Spread the cream cheese on top of the egg whites
 
4. Shred the chicken cold cuts by hand and spread them on top of the cream cheese layer

5. Distribute salsa over the chicken layer and add any other toppings at this point (in my case, steamed broccoli)

6. Top the pizza with parmesean cheese and a little garlic salt

7. Place the pizza in the broiler for about 5-10 minutes or you can put it back in the microwave if you’re in a rush

8. Place on a plate and enjoy!!

I'm saving all these because in about 4 weeks im going low carb high healthy fats for a little... maybe 3 or 4 weeks ughhh idk that sounds horrible lol. Maybe just do some one week Carb cycling.  Decisions decisions.

Hahahaa does sound kinda crazy!!! Have you ever been in a low or no Carb diet?  Or Carb cycle? There's not much you can eat it seems sometimes lol. Crazy what you might try at times like that.

low carb and am currently doing carb cycling/backloading, on my low carb days I just eat dark green veggies that keep the stomach nice and full. But you gotta admit egg pizza is weird lol. But yeah its always good to get creative, I have found a lot of different ways to use veggies as a substitute for higher carb food such as potatoes, rice, bread, etc.
