Looks like animal fats and protein may lead to higher cholesterol but at the same time have a lower rate of CVD

What do you'all make of this?

Because cholesterol is not the cause of CVD. Oxidation is. No oxidation = no plaque buildup.

When we stop treating the symptoms and start treating the cause we prevent the disease.
